Les levures entrent en sommeil, tandis que les bact\u00e9ries lactiques continuent \u00e0 travailler lentement. Ce ralentissement permet de conserver le levain plusieurs jours (voire semaines) sans le nourrir.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il peut m\u00eame produire un liquide sombre en surface, s\u2019il reste trop longtemps sans repas. C&rsquo;est parfait pour conserver un rythme plaisir. Je vais ensuite vous expliquer comment on fait pour bien le r\u00e9activer \u00e0 la sortie du frigo. Mais d&rsquo;abord, comment bien pr\u00e9parer son levain pour le mettre en repos.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83e\udd63 <strong>Comment pr\u00e9parer son levain pour le frigo ?<\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Le bon ratio avant stockage \ud83e\udd0c<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Avant de r\u00e9frig\u00e9rer votre levain, nourrissez-le avec un ratio 1:2:2 (ex : 25 g de levain + 50 g d\u2019eau + 50 g de farine). Pas besoin d\u2019attendre qu\u2019il double : nourrissez, remuez, fermez, au frigo !<br><br><mark style=\"background-color:#f9ff00\" class=\"has-inline-color\">Mon astuce :<\/mark> pour cet usage, pour pouvez fermer votre bocal herm\u00e9tiquement, dans un bocal avec joint par exemple. Cela va permettre au levain de se mettre \u00ab\u00a0sous vide\u00a0\u00bb. Et vous aurez une bonne surprise \u00e0 l&rsquo;ouverture !<\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">Entretien au froid<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Rafra\u00eechir toutes les 2\/3 semaines, si vous y pensez<\/li>\n\n\n\n<li>Possibilit\u00e9 de nourrir et remettre au frigo sans attendre<\/li>\n\n\n\n<li>Il peut survivre un peu plus longtemps si besoin (jusqu&rsquo;\u00e0 2 mois, sans probl\u00e8me)<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Quand un levain est-il assez mature pour aller au frigo ?<\/strong><\/h2>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\">Ne mettez pas un b\u00e9b\u00e9 levain au froid !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un levain jeune (moins de 2 semaines) doit rester \u00e0 temp\u00e9rature ambiante pour se d\u00e9velopper. Il a besoin de rafraichis fr\u00e9quents au d\u00e9but pour se consolider int\u00e9rieurement et bien stabiliser sa colonie de micro-organismes (levures + bact\u00e9ries)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><mark style=\"background-color:#f9ff00\" class=\"has-inline-color\">Pour savoir s&rsquo;il est assez mature pour aller faire un tour au frais, posez-vous ces questions :<\/mark><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Est-ce qu\u2019il double 2 \u00e0 4h apr\u00e8s un rafra\u00eechi ?<\/li>\n\n\n\n<li>Est-il mousseux, actif, l\u00e9g\u00e8rement bomb\u00e9 ?<\/li>\n\n\n\n<li>Est-ce qu\u2019il sent l&rsquo;acide, le cidre, le vinaigre ? Si oui, c&rsquo;est bon signe et peut \u00eatre stock\u00e9<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><strong>Peut-on utiliser un levain directement en sortie de frigo ?<\/strong><\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Oui, dans l&rsquo;absolu, il est encore actif. Mais sera t-il suffisamment performant pour apporter son jus \u00e0 une p\u00e2te ?
