L&rsquo;oxyg\u00e9nation, c&rsquo;est souvent LE truc qu\u2019on oublie ! Et pourtant, ce n&rsquo;est pas une donn\u00e9e \u00e0 prendre \u00e0 la l\u00e9g\u00e8re.<\/p>\n\n\n\n<p>\ud83d\udca1 <strong>Pourquoi c\u2019est important ?<\/strong><br>Les levures et bact\u00e9ries pr\u00e9sentes dans ton levain sont \u00ab\u00a0a\u00e9robies\u00a0\u00bb : elles ont besoin d\u2019oxyg\u00e8ne pour respirer, se d\u00e9velopper, se multiplier.<br>Sans oxyg\u00e8ne, la fermentation se fait quand m\u00eame, mais plus lentement. R\u00e9sultat : un levain paresseux, qui monte peu, voire pas du tout.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\ud83d\udee0\ufe0f <strong>Ce que tu peux faire concr\u00e8tement :<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Couvre ton bocal, mais pas trop.<\/strong> Un tissu fin et un \u00e9lastique, c\u2019est suffisant. Tu peux aussi poser ton couvercle, sans le visser : \u00e7a l\u2019\u00e9touffe.<\/li>\n\n\n\n<li><strong>M\u00e9lange-le 1 \u00e0 2 fois entre deux rafra\u00eechis.<\/strong> Oui, m\u00eame s\u2019il ne r\u00e9clame rien. Prends une cuill\u00e8re (<a href=\"https:\/\/www.vilainlevain.com\/index.php\/produit\/mini-spatule\/\">ou la super mini spatule que je propose sur le site ici !<\/a>) et donne-lui un petit remue-m\u00e9nage \u00e9nergique : \u00e7a lui fait du bien ! L&rsquo;oxyg\u00e8ne pr\u00e9sent dans ton environnement va venir donner \u00ab\u00a0un coup de frais\u00a0\u00bb \u00e0 ton levain, lui apportant d&rsquo;autres micro-organismes.<\/li>\n<\/ul>\n\n\n\n<p>\ud83d\udccc Mn\u00e9motechnique : Rappelle toi ! C\u2019est le cas du seigle et des farines compl\u00e8tes : elles boostent l\u2019activit\u00e9 microbienne de ton levain en lui apportant des tas de nutriments. C&rsquo;est un vrai buffet \u00e0 volont\u00e9.<br>Le seigle a la particularit\u00e9 d&rsquo;avoir une activit\u00e9 enzymatique importante. Il fermente fort. C&rsquo;est donc un compl\u00e9ment int\u00e9ressant en cas de coup de mou.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\ud83d\udee0\ufe0f <strong>Comment faire :<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pendant quelques jours, <strong>remplace la moiti\u00e9 de ta farine habituelle par du seigle<\/strong> \u00e0 chaque rafra\u00eechi.<\/li>\n\n\n\n<li>Si tu as de la farine compl\u00e8te (T130 ou plus), fra\u00eechement moulue si possible, c\u2019est encore mieux : plus vivante, plus active, elle apportera une belle gamme de nutriments \u00e0 ton levain.<\/li>\n<\/ul>\n\n\n\n<p>\ud83d\udccc R\u00e9sultat attendu : un levain qui bulle plus vite, qui sent plus acidul\u00e9, avec une vraie mont\u00e9e visible dans le bocal. C\u2019est peut-\u00eatre juste qu\u2019il <strong>a besoin d\u2019un petit coup de boost.<\/strong><\/p>\n\n\n\n<p>\ud83d\udca1 <strong>Pourquoi \u00e7a marche ?<\/strong><br>Chaque rafra\u00eechi, c\u2019est un afflux de \u00ab\u00a0carburant\u00a0\u00bb pour les levures et bact\u00e9ries. En augmentant le rythme des rafra\u00eechis, tu relances leur multiplication. C\u2019est particuli\u00e8rement utile apr\u00e8s une p\u00e9riode de frigo, ou quand ton levain est jeune, ou que les temp\u00e9ratures baissent, comme en ce mois de novembre.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\ud83d\udee0\ufe0f <strong>Concr\u00e8tement :<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Passe \u00e0 <strong>2 ou 3 rafra\u00eechis par jour<\/strong>, pendant <strong>2 \u00e0 3 jours max.<\/strong><\/li>\n\n\n\n<li>Utilise un ratio 1:2:2 (par exemple 10g de levain + 20g de farine + 20g d\u2019eau), pour bien nourrir sans l\u2019\u00e9touffer.<\/li>\n\n\n\n<li>Observe bien : si une couche liquide (le \u00ab\u00a0<em>hooch<\/em>\u00ab\u00a0) se forme rapidement, c\u2019est qu\u2019il a <strong>tr\u00e8s faim<\/strong> ! C\u2019est peut-\u00eatre parce qu\u2019il est trop liquide. Et du coup, les bulles ne peuvent pas s\u2019accrocher \u00e0 la p\u00e2te pour monter, car il n&rsquo;y a pas assez de densit\u00e9.<\/p>\n\n\n\n<p>\ud83d\udca1 <strong>Pourquoi \u00e7a aide ?<\/strong><br>Un levain ferme (genre p\u00e2te \u00e0 pain tr\u00e8s souple) garde mieux le gaz produit par la fermentation. R\u00e9sultat : il monte mieux, il bullera plus, et tu visualises plus facilement son activit\u00e9.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\ud83d\udee0\ufe0f <strong>Comment faire un levain plus ferme :<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pendant 1 ou 2 rafra\u00eechis, <strong>r\u00e9duis l\u2019eau<\/strong> de moiti\u00e9 par rapport \u00e0 d&rsquo;habitude.<\/li>\n\n\n\n<li>Au lieu d&rsquo;utiliser un ratio 1:1:1 c&rsquo;est \u00e0 dire tant pour tant (m\u00eame quantit\u00e9 de levain, que d&rsquo;eau, que de farine) fais plutot un rafraichis comme suit : 1:1\/2:1 (une dose de levain + 1\/2 dose d&rsquo;eau + 1 dose de farine.
