Il devient imp\u00e9ratif de s&rsquo;adapter, au risque de voir tous nos efforts s&rsquo;effondrer !<\/p>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Surfermentation, exc\u00e8s de chaleur, r\u00e9seau de gluten qui se rompt, acidit\u00e9 prononc\u00e9e, la chaleur provoque de nombreuses r\u00e9action sur la p\u00e2te \u00e0 pain, et encore davantage lorsque le pain est ensemenc\u00e9 avec du levain ! <\/p>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">R\u00e9sultat, on se retrouve avec un pain plat ou une p\u00e2te qui se d\u00e9sint\u00e8gre lorsqu&rsquo;on la met en banneton&#8230; Triste spectacle :\/<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Pourquoi ces r\u00e9sultats ?<\/strong><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Car la fermentation est en fin de course et le levain n&rsquo;a plus assez d&rsquo;\u00e9nergie \u00e0 donner en cuisson. Les microorganismes sont fatigu\u00e9s (vous n&rsquo;\u00eates pas fatigu\u00e9.e lorsque vous avez faim ? :p) et ne produisent plus suffisamment de r\u00e9actions et de gaz de fermentation.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">S&rsquo;ajoute \u00e0 cel\u00e0 le r\u00e9seau de gluten, qui est endommag\u00e9 car trop acidifi\u00e9. Les mailles du r\u00e9seau sont ab\u00eem\u00e9es et ne peuvent plus contenir les gaz. Ce qui a pour cons\u00e9quence un pain qui ne gonfle pas lorsqu&rsquo;il est cuit, et une mie trop acide&#8230;<\/p>\n\n\n\n<div style=\"width:100%;height:0;padding-bottom:57%;position:relative;\"><iframe data-src=\"https:\/\/giphy.com\/embed\/ToMjGppLes0ENI5osCc\" width=\"100%\" height=\"100%\" style=\"position:absolute\" frameBorder=\"0\" class=\"giphy-embed lazyload\" allowFullScreen src=\"about:blank\" data-load-mode=\"0\"><\/iframe><\/div><p><a href=\"https:\/\/giphy.com\/gifs\/cat-hot-fan-ToMjGppLes0ENI5osCc\"\/a><\/p>\n\n\n\n<div style=\"height:27px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading has-black-color has-text-color\"><strong>Voici mes 8 astuces pour adapter sa routine et faire un pied de nez \u00e0 la canicule :<\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading has-luminous-vivid-amber-color has-text-color\"><mark style=\"background-color:#fcfa00\" class=\"has-inline-color has-black-color\">1. Diminuer le temps d&rsquo;appr\u00eat<\/mark><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">On peut passer sans probl\u00e8me des 2h habituelles \u00e0 1h, voir 20\/30 min. Ce conseil peut \u00e9galement d&rsquo;appliquer au pointage qui, en fonction de la chaleur ambiante peut \u00e9galement \u00eatre un peu r\u00e9duit. Le tout est vraiment d&rsquo;observer sa p\u00e2te et de constater l&rsquo;avancement de la fermentation. <\/p>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Point de rep\u00e8re : Pour l&rsquo;appr\u00eat, si le p\u00e2ton a pris du volume, inutile d&rsquo;attendre plus, c&rsquo;est le top d\u00e9part pour la cuisson !<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-luminous-vivid-amber-color has-text-color\"><mark style=\"background-color:#fcf100\" class=\"has-inline-color has-black-color\">2. Diminuer la dose de levain<\/mark><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">En effet, plus la proportion de levain est \u00e9lev\u00e9e dans une recette, plus la fermentation devra \u00eatre men\u00e9e \u00ab\u00a0rapidement\u00a0\u00bb. <\/p>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Ex : pour ma recette de pain \u00ab\u00a0Tartine\u00a0\u00bb traditionnel, j&rsquo;utilise 100g de levain p\u00e2teux pour 500g de farine. Ce qui fait un ratio de 20%. Avec cette dose, lorsqu&rsquo;il fait chaud, je suis oblig\u00e9e de cuire mon pain \u00ab\u00a0en direct\u00a0\u00bb, c&rsquo;est \u00e0 dire que je le cuits apr\u00e8s un l&rsquo;appr\u00eat court (1 heure environ), sans mise au froid, car le p\u00e2ton continue de fermenter et la surfermentation guette !<\/p>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">J&rsquo;adapte donc ma recette et n&rsquo;utilise que 50g de levain. De cette fa\u00e7on, je peux mettre mon p\u00e2ton au frigo pour un appr\u00eat dit \u00ab\u00a0retard\u00e9\u00a0\u00bb sans probl\u00e8me.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-luminous-vivid-amber-color has-text-color\"><mark style=\"background-color:#fcf100\" class=\"has-inline-color has-black-color\">3. R\u00e9duire la temp\u00e9rature de l&rsquo;eau<\/mark><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">On oublie l&rsquo;eau \u00e0 40\u00b0C qui fonctionne parfaitement pour enclencher la fermentation de d\u00e9part. Lorsqu&rsquo;il fait chaud, la masse se r\u00e9chauffe rapidement. On met donc de l&rsquo;eau \u00e0 temp\u00e9rature ambiante, c&rsquo;est suffisant. <\/p>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Je d\u00e9conseille l&rsquo;eau froide parce qu&rsquo;elle pourrait par contre bloquer l&rsquo;activit\u00e9 des micro-organismes, ou de favoriser qu&rsquo;un certain type (levures, par exemple)<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-luminous-vivid-amber-color has-text-color\"><mark style=\"background-color:#fcf100\" class=\"has-inline-color has-black-color\">4. Utiliser le levain lorsqu&rsquo;il n&rsquo;est pas encore \u00e0 son pic<\/mark><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">&#8230; Mais juste un peu avant (vous savez, quand il forme un petit d\u00f4me mignon :p). Ainsi, le levain sera jeune et pas aigre, ce qui favorisera une fermentation plus douce.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-luminous-vivid-amber-color has-text-color\"><mark style=\"background-color:#fcf100\" class=\"has-inline-color has-black-color\">5. Favoriser le levain dur<\/mark><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Un levain dur, compos\u00e9 de moins d&rsquo;eau et aux microorganismes sp\u00e9cifiques, supporte mieux les fermentations prolong\u00e9es. Il lib\u00e8re son pouvoir fermentataire de fa\u00e7on plus progressive. C&rsquo;est un marathonien !<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-luminous-vivid-amber-color has-text-color\"><mark style=\"background-color:#fcf100\" class=\"has-inline-color has-black-color\">6. Prendre en compte les farines utilis\u00e9es<\/mark><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Je ne le r\u00e9p\u00e9terai jamais assez. Une farine plus compl\u00e8te (qui contient davantage de son) fermentera plus rapidement. C&rsquo;est souvent la m\u00eame chose avec les farines de bl\u00e9s anciens (Poke la Fleur de Berry&nbsp;\ud83d\ude05).<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-luminous-vivid-amber-color has-text-color\"><strong><mark style=\"background-color:#fcf100\" class=\"has-inline-color has-black-color\">7. Se rendre chez son boulanger pr\u00e9f\u00e9r\u00e9 !<\/mark><\/strong><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Et oui, lorsqu&rsquo;on a pas envie d&rsquo;allumer le four ou qu&rsquo;on ne se sent pas d&rsquo;appliquer ces changements, le plus simple reste d&rsquo;aller chez notre boulange pr\u00e9f\u00e9r\u00e9 \ud83d\ude43 ! On se rend compte par la m\u00eame occasion de la difficult\u00e9 du m\u00e9tier. Il est rare que les fournils soient \u00e9quip\u00e9s de la clim&#8230;<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-luminous-vivid-amber-color has-text-color\"><mark style=\"background-color:#fcf100\" class=\"has-inline-color has-black-color\">8. Cuire aux heures les moins chaudes<\/mark><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color wp-block-paragraph\">Et oui, quand il fait d\u00e9j\u00e0 30\u00b0C dans la cuisine, on a pas envie d&rsquo;en rajouter&#8230; C&rsquo;est pour cela que je favorise les pousses retard\u00e9es au frigo, ainsi, je cuits au matin, de bonne heure, avant les grosses chaleurs de la journ\u00e9e.
