L\u2019eau ti\u00e8de acc\u00e9l\u00e8re trop la fermentation, qui est d\u00e9j\u00e0 boost\u00e9e par la chaleur. R\u00e9sultat : pain sur-ferment\u00e9, go\u00fbt moins d\u00e9velopp\u00e9, et mie tass\u00e9e.<br \/>\n\ud83c\udf21\ufe0f En \u00e9t\u00e9, une eau \u00e0 temp\u00e9rature ambiante suffit largement ! Il ne doit plus rester de mati\u00e8re s\u00e8che apparente.<br \/>\nLe m\u00e9lange est grumeleux \u00e0 ce stade, c&rsquo;est normal. Elle va \u00eatre liss\u00e9e et va prendre du corps gr\u00e2ce \u00e0 la fermentation et aux rabats.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><strong>Pointage<\/strong> : laisse fermenter ta p\u00e2te en la couvrant \u00e0 temp\u00e9rature ambiante 3h environ avec 2 rabats espac\u00e9s (j&rsquo;en fais un 30 min apr\u00e8s le frasage et un second 30 min avant la fin du pointage, mais un seul au d\u00e9but peut suffir).<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Bien surveiller le pointage pour que la p\u00e2te ne surfermente pas. S&rsquo;il fait 30 degr\u00e8s dans la cuisine, il est possible que le pointage soit men\u00e9 suffisamment apr\u00e8s 2h\/2h30.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><strong>Fa\u00e7onnage<\/strong> : Lorsque le pointage est termin\u00e9. D\u00e9barrasse la p\u00e2te sur le plan de travail farin\u00e9 et fa\u00e7onne en boule ou b\u00e2tard, comme tu veux. Mets en banneton farin\u00e9.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><strong>Appr\u00eat au frigo<\/strong> : dispose ton p\u00e2ton couvert au frigo pour 12h de pousse lente et un max de go\u00fbt. Mon frigo est r\u00e9gl\u00e9 sur 4 degr\u00e9s, pas moins. La fermentation continue doucement \u00e0 cette temp\u00e9rature.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><strong>Cuisson<\/strong> : Le lendemain matin (je te conseille tr\u00e8s t\u00f4t pour \u00e9viter de surchauffer ta cuisine&#8230;), enfourne dans une cocotte pr\u00e9chauff\u00e9e \u00e0 250\u00b0C, en chaleur statique. Tu peux cuire ton pain 30 min couvercle ferm\u00e9 \u00e0 250\u00b0C + 20 min \u00e0 210\u00b0C, couvercle ouvert, pour colorer la surface de la cro\u00fbte.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><!-- \/wp:list-item --><!-- \/wp:list --><\/div>\n<p><!-- \/wp:column --><\/div>\n<p><!-- \/wp:columns --><!-- wp:paragraph --><strong><mark class=\"has-inline-color\" style=\"background-color: #fcfa00;\">BONUS Astuce cuisson :<\/mark><\/strong> J&rsquo;\u00e9teins mon four 5 minutes avant la fin de la cuisson et je laisse mon pain dans le four 10 minutes. Au lieu des 20 minutes \u00e0 210\u00b0C, je fais 15 minutes, puis j&rsquo;\u00e9teins et je laisse dans le four 10 minutes suppl\u00e9mentaires.
