L&rsquo;oxyg\u00e9nation, c&rsquo;est souvent LE truc qu\u2019on oublie ! Et pourtant, ce n&rsquo;est pas une donn\u00e9e \u00e0 prendre \u00e0 la l\u00e9g\u00e8re.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83d\udca1 <strong>Pourquoi c\u2019est important ?<\/strong><br>Les levures et bact\u00e9ries pr\u00e9sentes dans ton levain sont \u00ab\u00a0a\u00e9robies\u00a0\u00bb : elles ont besoin d\u2019oxyg\u00e8ne pour respirer, se d\u00e9velopper, se multiplier.<br>Sans oxyg\u00e8ne, la fermentation se fait quand m\u00eame, mais plus lentement. R\u00e9sultat : un levain paresseux, qui monte peu, voire pas du tout.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">\ud83d\udee0\ufe0f <strong>Ce que tu peux faire concr\u00e8tement :<\/strong><\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Couvre ton bocal, mais pas trop.<\/strong> Un tissu fin et un \u00e9lastique, c\u2019est suffisant. Tu peux aussi poser ton couvercle, sans le visser : \u00e7a l\u2019\u00e9touffe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>M\u00e9lange-le 1 \u00e0 2 fois entre deux rafra\u00eechis.<\/strong> Oui, m\u00eame s\u2019il ne r\u00e9clame rien. Prends une cuill\u00e8re (<a href=\"https:\/\/www.vilainlevain.com\/index.php\/produit\/mini-spatule\/\">ou la super mini spatule que je propose sur le site ici !<\/a>) et donne-lui un petit remue-m\u00e9nage \u00e9nergique : \u00e7a lui fait du bien ! L&rsquo;oxyg\u00e8ne pr\u00e9sent dans ton environnement va venir donner \u00ab\u00a0un coup de frais\u00a0\u00bb \u00e0 ton levain, lui apportant d&rsquo;autres micro-organismes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83d\udccc <em>Mn\u00e9motechnique : Rappelle toi ! C\u2019est le cas du seigle et des farines compl\u00e8tes : elles boostent l\u2019activit\u00e9 microbienne de ton levain en lui apportant des tas de nutriments. C&rsquo;est un vrai buffet \u00e0 volont\u00e9.<br>Le seigle a la particularit\u00e9 d&rsquo;avoir une activit\u00e9 enzymatique importante. Il fermente fort. C&rsquo;est donc un compl\u00e9ment int\u00e9ressant en cas de coup de mou.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">\ud83d\udee0\ufe0f <strong>Comment faire :<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pendant quelques jours, <strong>remplace la moiti\u00e9 de ta farine habituelle par du seigle<\/strong> \u00e0 chaque rafra\u00eechi.<\/li>\n\n\n\n<li>Si tu as de la farine compl\u00e8te (T130 ou plus), fra\u00eechement moulue si possible, c\u2019est encore mieux : plus vivante, plus active, elle apportera une belle gamme de nutriments \u00e0 ton levain.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83d\udccc R\u00e9sultat attendu : un levain qui bulle plus vite, qui sent plus acidul\u00e9, avec une vraie mont\u00e9e visible dans le bocal. En dessous de 20\u00b0C, l\u2019activit\u00e9 des levures ralentit drastiquement. Tu peux attendre 12h sans voir la moindre bulle. Au-dessus de 24\u00b0C, c\u2019est la fiesta dans le bocal !<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">\ud83d\udee0\ufe0f <strong>Comment garder ton levain au chaud ?<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Place-le dans un four \u00e9teint avec juste la lumi\u00e8re allum\u00e9e.<\/li>\n\n\n\n<li>Ou sur le dessus du frigo, pr\u00e8s de la chaudi\u00e8re, de ta box internet, voire dans une bo\u00eete avec une petite bouillotte ou une lampe chauffante basse tension. Il y a plein de petits \u00ab\u00a0points chauds\u00a0\u00bb dans une maison ou un appartement. Souvent, on perd plus de temps et de mati\u00e8re premi\u00e8re \u00e0 vouloir le r\u00e9cup\u00e9rer. Je parle par exp\u00e9rience (et j\u2019ai perdu assez de temps avec \u00e7a \ud83d\ude43)<br><br>Et pour r\u00e9pondre \u00e0 cette probl\u00e9matique, j\u2019ai cr\u00e9\u00e9 un <a href=\"https:\/\/www.vilainlevain.com\/index.php\/produit\/sachet-de-levain-deshydrate\/\"><strong>levain d\u00e9shydrat\u00e9 pr\u00eat en 24h<\/strong> <\/a>: la solution la plus simple pour repartir sans perdre de temps.
